"Besan gatte Ki kadhi" is a popular dish from the state of rajasthan. Its a combination of besan/gramflour dumplings made with authentic Indian spices cooked in spicy yogurt sauce,gives it a really nice tangy & spicy combination.
Rajasthani cuisine was inspired a lot by its war style of inhabitants & availability of ingredients in this arid region.
Being married in such a family,with such background it taught me a lot about their cuisine,their lifestyle,their rituals & traditions.
Here i am sharing one of my mom-in-laws authentic khadi recipe.Its a guarantee once you`ll get the taste of it you`ll never be able to stop yourself for asking for more.
All u need
Ingredients
Besan/gramflour 1 cup
Curd 2tbsp
Red chilli powder 1 tsp(you can adjust the amount of chilli powder according to your taste)
Turmeric powder 1/2 tsp
Garam masala powder 1/2tsp
Oil 2 tbsp
Salt to taste
Recipe of making besan gatte
1.In a bowl mix together besan,salt,red chilli powder,turmeric,curd,oil,garam masala powder,mix well & make it into soft dough,you can add little water at a time.The dough is usually sticky so you can add few drops of oil in your palms to avoid dough from sticking your hands.
2.Divide this dough into 5-6 long logs.
3.In a pot boil 2-3 cups of water.
4.once the water starts boiling slowly add these besan gatte one by one.
5.Leave them in water for 5-6 mins,you will come to know theyre cooked when they will raise from the bottom & will start floating on the surface.
6.Take them out & drain the water.
8.Heat the oil in a kadhai,once the oil is hot drop the gatte in the oil,let them fry till golden brown,this might take 3-4 mins,dont overcook them,u just need a nice golden colour on top.
9.Gatte are ready.
(Gatte can be served as it is for snacks with some green coriander chutney,they tastes awesome.while i make gatte for kadhi i have to keep in mind to make some extra because my husband just can`t resist himself from munching these gattes.you can also make gattes in advance & store them in airtight containers.)
Ingredients for kadhi
Yogurt 1 cup
gramflour 1tbsp
Ginger-garlic paste 2tbsp
Chopped green chillies 1tsp
chilli powder 1tsp
turmeric powder 1/2 tsp
coriander powder 1 tsp
cumin seeds 1tsp
Musturd seeds 1/2 tsp
Methi dana 1/2 tsp
Asafetida/hing 1/4 tsp
Red whole chillies 2
Bay leaves 1
Salt to taste
Oil 2tbs
Recipe
1.In a bowl mix together besan,yogurt,red chilli powder,turmeric powder,coriander powder,ginger-garlic paste,chopped green chillies & salt.mix everything well now add 1 cup water to make a smooth paste.
2.Heat the oil in kadhai/saucepan,once oil is hot add cumin seeds,musturd seeds,asafetida,red whole chillies,bay leaf & methi dana.
3.Now add our yougurt-besan paste in this & mix everything well.
5.Now add our pre cooked gattes into this,cover it & let it cook on low-medium heat for about 15-20 mins.
6.you`ll know that kadhi is ready when you`ll whole kitchen will start smelling with the aroma of all that yogurt,besan & hing!!
7.It takes almost 15-20 mins for kadhi to cook perfectly,garnish it with chopped cilantro.
