Instant jalebi recipe
All you need
Ingredients
All purpose flour 1/2 cup
Cornstarch 1/2 tsp
Dry active yeast 1tsp
Sugar 1 tsp
warm water 1/2 cup
Yogurt 1tbsp
Yellow food colour(optional)
Oil for frying
For sugar syrup
sugar 1 cup
water 1/3 cup
lemon juice 1/2 tsp
cardomom pdr 1/2 tsp
rose extract(optional) 1tsp
Recipe
1.In a bowl add lukewarm water 1/2 cup,to this add 1tsp sugar,& 1tsp dry active yeast ,mix everything & keep it asaide for atleast 10 mins,to let it rise.
2.Now take another bowl in this add 1/2 cup all purpose flour/maida,to this add 1/2 tsp cornstarch,& mix well.
3.Now to this add 1tbsp yougurt & mix well.
4.Now take the yeast mix & pour 1-2 tsp in this mix,keep adding little at a time to make a smooth batter for jalebi.You can also add yellow food colour at this point,but again its totally optional.
5.Now the batter is ready.
6.In a saucepan add 1cup sugar to 1/3rd cup water,& bring this to boil,after the first boil let it simmer for 10 mins,to make the sugar syrup to dip in jalebi`s.to this add few drops of lemon juice,pinch of cardomom & 1tsp rose extract.
7.Now time to make jalebi`s i have used a piping back to make jalebi`s as you can see in the pics,but if you have a squeez bottles that will be great,or even ziplock bags works fine.
8.Heat the oil in kadai for frying.
9.Now start making jalebi`s directly in hot oil,you don`t need to be perfect in this in the very first time,neither am i,but can definately get better with little practice.
10.Once you see jalebi`s are getting darker,you`ll know they are cooked,now just take them out of the hot oil & directly dip them in the sugar syrup,once coated overall with the syrup remove them,don`t let them rest in sugar syrup for long this will make them soggy.
Delicious jalebi's are ready.best combination is to serve them with poha. Jalebi & poha makes an interesting combo.Its the most popular breakfast across malwa region of M.P,especially in Indore,bhopal,ratlam,ujjain & hoshangabad.
