Panipuri Recipe

Panipuri recipe


Panipuris are known by different names in different parts of the India,Golgappas,puchkas,Pani ke bataashe & gup chup.Pani is Hindi word for water & puri means an Indian bread made by deep frying in the oil.it consist of round hollow puri filled with spicy mixture of potatoes,chickpeas,onions,tomatoes & yogurt & tamarind paste,dipped in tangy tamarind water.
Puri for panipuri

All you need

Ingredients



Semolina/sooji 2 cups
Salt as per taste
Maida/all purpose flour 2tsp
warm water for kneading

Recipe

1.In a bowl take semolina/sooji,make sure sooji is real fine.


2.Add salt,& sprinkle 1-2 tsp of all purpose flour.


3.Knead this into a hard dough,you need to knead this real well,for at least 7-8 Min's.


4.Add just 1/2tsp oil to make the dough smooth in the end.
5.Cover it with a damp cloth & let it rest for at least 20 Min's.


6.After 20 Min's start rolling this dough,roll it real thin.

7.Now with the help of cookie cutter,or any round bottle cap,just cut them into small round circles.(as shown in the pic)

8.Now take them out onto a plate,all the excess dough can be again rolled back,& this process can be repeated over & over again until you are all out of dough.

9.Now its time to deep fry these super cute puris,make sure the oil is not very hot,the flame should be on medium-low.

10.Once they are done on one side,just turn them onto other side,& fry till they are golden brown in colour.

11.Once they are done now take them out in a paper towel,so that they soak up all the extra oil.puris are ready.now time to make pani for these puris.



Pani for Panipuris

All you need

Ingredients

Cold water 1ltr
Tamarind juice 1 cup
Rock salt 1tsp
Cumin pdr 1 tsp
Coriander pdr 1 tsp
Red chili pdr 1/2 tsp
Black pepper pdr 1/4tsp
sugar 1-2 tsp or as per taste
Salt as per taste
Chopped Coriander leaves
Chopped mint leaves
A small piece of ginger
Green chilies 2-3

Recipe

1.In a blender roughly blend chopped coriander,mint,ginger & green chilies,to make a coarse paste.




2.Now add water in a large bowl,to this add the paste that we just made,& add all other ingredients,you can check seasoning according to your taste.

Pani for panipuri is ready,i have added few boondi`s in the pani(its totally optional,but works great if you have it do add some),this pani is a excellent for digestion & can be taken after a heavy meal,or a sunny afternoon,when you are feeling really dehydrated,serve this with some ice-cubes,& can be enjoyed as it is.


For the filling in the puris

you can add whatever you like to add in your puris or what ever is available at hand.
i m sharing what i have added in my puris.


Ingredients for filling

Boiled & mashed up potatoes 1
Boiled & mashed up chickpeas 1/2 cup
Chopped onions
chopped tomatoes
yogurt
Tamarind chutney
sev

For presenting the puris make a small hole in the center of the puris,fill them with your favourite ingredients,& serve the pani in a separate bowl.
for eating you have to first dip them in the pani & than wait no more,they should directly go in the mouth.

Instant Besan Laddo In Microwave

Instant Besan Laddo Recipe


All you need



Ingredients

Gram flour/besan 2cups
Powdered sugar 1 cup
Ghee/Clarified butter 1/2 cup
Grounded nuts 3-4 tsp
Cardamom pdr 1/2 tsp
Semolina/Sooji 1tsp

Recipe

1.Add 1/2 cup ghee in a microwave safe bowl, & microwave it for just 40 sec.


2.Now to this add 1tsp semolina/sooji & 2 cups of  gramflour/besan,& just a pinch of salt,now stir & mix everything well.


3.Now microwave it for 2 Min's on high flame.


4.Now stir it & it goes in the microwave for total 3  Min's,stirring after every 1 min till you get a nice light brown colour.
5.Now add grounded nuts to this mix well & again microwave it for 1 min.


6.Now let besan mixture cool down for at least 10 Min's.
7.Now add  1 cup powdered sugar & cardamom pdr & mix well.


8.Now make small pedas/laddos out of this mixture,if the mixture is dry you can add few drops of warm milk to make laddos.To smooth the laddo you can apply few drops of oil in both the palms & than make laddo this way your laddos will have a smooth look.

Delicious besan laddo`s are ready,garnish with raisins.you can keep these in airtight containers for as long as 2 months.they have really long shelf life.

Balushahi Recipe

Balushahi

All you need



Ingredients

All purpose flour 3 cups
Ghee/Clarified Butter 1cup
Sugar 1 1/2 cup
Yogurt 1/4 cup
Baking soda 1/4 tsp
Rose extract few drops
Cardamom pdr 1/4 tsp
Chopped almonds & pistachios for garnishing
oil for deep frying

Recipe

1.In a bowl Sift 3 cups all purpose flour,to this add ghee/clarified butter,yogurt,baking soda & mix well.


2.Now knead this into a soft dough,using little water at a time,you don`t need to make a smooth dough,you need all the folds,so just mix everything & set it aside for 20 Min's.



3.Now lets prepare the sugar syrup,for that pour sugar in a pan,to this add 3/4 cup water,& let it boil,after the first boil,add few drops of rose water/gulabjal & a pinch of cardamom pdr,we are making single thread sugar syrup,so it will just around 4-5 Min's.



4.Now we`ll start making the pedas/balls of our dough,just divide the dough into equal portions,it will make 20-25 balushahi depending on the size of your pedas,you don't have to make them smooth u need their wedges,that will help them to be moist from inside.



5.Now we`ll deep fry them in oil,at a very-very low temp,make sure that the heat should be very low,because you want them to be cooked properly,also don't overcrowd them in the pan,depending on the size of your pan/kadai,this will take around 12-15 Min's to cook them on the very low flame,you want them to be fully cooked,& deep brown in colour.while frying them be very gentle in turning them as they are indeed very soft,& may break easily,so wait for 4-5 Min's till you turn them on the other side.




6.They will slightly rise in size in frying ,& will be golden brown in colour than you`ll know they are done.once done than take them out on a plate laid with paper towel so that it will soak all the extra oil.

7.Now soak them in the sugar syrup,for at least 20 Min's,after that take them out in a plate,garnish with chopped pistachios & almonds,& again let them air dry so that the  syrup will set in them properly.


Delicious & mouth watering balushahi are ready.These are excellent sweets/mithai from the northern part of India,can be made  for any festivals & has an excellent shelf life,compared to any other mawa/khoya sweets.
Just store them in airtight containers & they are good to go for at least 3-4 weeks.of course if you can resist yourself from not eating them.

Microwave Instant poha chivda ready in less than 10 mins

Instant poha chivda

All you need



Ingredients

Thin poha 3 cups
Oil 2tsp
Mustard seeds 1tsp
cumin seeds 1 tsp
Hing just a pinch
peanuts 1 cup
cashews 1/2 cup
curry leaves 7-8
red chilies whole 1-2
sugar 1 tsp
salt to taste

Recipe

1.In a microwave safe bowl add 2tsp oil,heat this oil in microwave at high for about 1 min.
2.Now add mustard seeds,cumin seeds,curry leaves,red chilies & again microwave it for 2 Min's.


3.After 2 Min's add turmeric pdr,hing,cashew nuts & peanuts,mix well & again microwave for 1 min.


4.Now add poha mix well & microwave it for 3 Min's,stirring after every 3 Min's.


5.Now let it cool down little bit for 2-3 Min's than add salt & sugar as per taste & mix well & microwave it again for 1 min.






Instant poha chivda is ready.this is a great snack to go with evening tea.Its a very quick & easy recipe.try it.
