Panipuri Recipe

Panipuri recipe


Panipuris are known by different names in different parts of the India,Golgappas,puchkas,Pani ke bataashe & gup chup.Pani is Hindi word for water & puri means an Indian bread made by deep frying in the oil.it consist of round hollow puri filled with spicy mixture of potatoes,chickpeas,onions,tomatoes & yogurt & tamarind paste,dipped in tangy tamarind water.
Puri for panipuri

All you need

Ingredients



Semolina/sooji 2 cups
Salt as per taste
Maida/all purpose flour 2tsp
warm water for kneading

Recipe

1.In a bowl take semolina/sooji,make sure sooji is real fine.


2.Add salt,& sprinkle 1-2 tsp of all purpose flour.


3.Knead this into a hard dough,you need to knead this real well,for at least 7-8 Min's.


4.Add just 1/2tsp oil to make the dough smooth in the end.
5.Cover it with a damp cloth & let it rest for at least 20 Min's.


6.After 20 Min's start rolling this dough,roll it real thin.

7.Now with the help of cookie cutter,or any round bottle cap,just cut them into small round circles.(as shown in the pic)

8.Now take them out onto a plate,all the excess dough can be again rolled back,& this process can be repeated over & over again until you are all out of dough.

9.Now its time to deep fry these super cute puris,make sure the oil is not very hot,the flame should be on medium-low.

10.Once they are done on one side,just turn them onto other side,& fry till they are golden brown in colour.

11.Once they are done now take them out in a paper towel,so that they soak up all the extra oil.puris are ready.now time to make pani for these puris.



Pani for Panipuris

All you need

Ingredients

Cold water 1ltr
Tamarind juice 1 cup
Rock salt 1tsp
Cumin pdr 1 tsp
Coriander pdr 1 tsp
Red chili pdr 1/2 tsp
Black pepper pdr 1/4tsp
sugar 1-2 tsp or as per taste
Salt as per taste
Chopped Coriander leaves
Chopped mint leaves
A small piece of ginger
Green chilies 2-3

Recipe

1.In a blender roughly blend chopped coriander,mint,ginger & green chilies,to make a coarse paste.




2.Now add water in a large bowl,to this add the paste that we just made,& add all other ingredients,you can check seasoning according to your taste.

Pani for panipuri is ready,i have added few boondi`s in the pani(its totally optional,but works great if you have it do add some),this pani is a excellent for digestion & can be taken after a heavy meal,or a sunny afternoon,when you are feeling really dehydrated,serve this with some ice-cubes,& can be enjoyed as it is.


For the filling in the puris

you can add whatever you like to add in your puris or what ever is available at hand.
i m sharing what i have added in my puris.


Ingredients for filling

Boiled & mashed up potatoes 1
Boiled & mashed up chickpeas 1/2 cup
Chopped onions
chopped tomatoes
yogurt
Tamarind chutney
sev

For presenting the puris make a small hole in the center of the puris,fill them with your favourite ingredients,& serve the pani in a separate bowl.
for eating you have to first dip them in the pani & than wait no more,they should directly go in the mouth.
