Minty Minute Drink

Minty Minute Drink


As the name says its minty minute drink which means that its cool & refreshing drink which is very easy to make & can be made in a minute.

Ingredients

Mint leaves 1cup
Cucumber cut into cubes 1 & 1/2 cup
Lime juice 
Black salt a pinch
Sugar 3tsp
crushed ice
water 1/2 cup


Recipe

Mix everything in a blender cucumber chunks,mint leaves,sugar,black salt,lime juice,crushed ice,water.blend well.

For serving 

Pour the drink in a glass with some crushed ice,garnish with mint leaves.
enjoy this refreshing drink.


Ragda Patties/Indian fast food snack/chaat

Ragda Patties



Ragda patties is a popular fast food snack/chaat
along with panipoori or bhelpoori.
This dish has two parts one is potato cutlets known as patties & other is ragda which is a soup prepared using white peas,garnished with chutneys & chopped onions & coriander on top.

Ingredients

White peas (soaked overnight) 1 cup
Boiled potatoes 4 medium
Mustard seeds 1tsp
Hing/Asafoetida 1/4 tsp/or a pinch
Turmeric 1/2 tsp
Red chili pdr 1tsp
Salt to taste
jaggery 1tsp
curry leaves 4-5
Tamarind paste 1tsp
Green chili 1-2
oil 1tbsp
water as u need

For garnishing/serving

Chopped coriander for garnishing
Yogurt as u need/1-2 tsp
Green chutney 1-2 tsp
Tamarind chutney 1-2 tsp
Sev for garnishing 1/4 cup

Recipe for ragda/white peas soup

1.Boil the white peas with salt until they are tender might take 20-25 Min's on a medium flame,(make sure to soak them overnight,in 1 cup white peas add 3 cups water & let them soak overnight,or at least for 6-8 hrs)
2.Now heat 1tbsp oil in a wok/kadai add mustard seeds & curry leaves,once they start splatter add hing,turmeric pdr & red chili pdr.
3.Now add white peas,to this add jaggery & tamarind paste,if you feel the soup is too thick you may add desired amount of water at this point,& let it cook on a medium-slow fame for 4-5 Min's.

Ragda is ready,you can check the seasonings at this point,& can add modify according to your taste.

Recipe for potato cutlets/patties

1.Mash the boiled potatoes,to this add chopped green chilies,chopped coriander & salt,mix everything well.
2.Now make small round patties.
3.Heat a griddle/pan with some oil/ghee/clarified butter now place the patties on this pan & cook them till nice brown from both the sides.

Patties are done.

For Garnishing/Serving



 In a plate place two patties on top pour the ragda,now add  a spoon of green chutney,tamarind chutney,yogurt,chopped onions,chopped coriander leaves & sev.serve hot.

Methi Matar Malai Mushroom curry

Methi Matar Malai Mushroom Curry



Ingredients


Green peas/matar 1 cup
Mushrooms 1 cup
Kastoori methi crushed 2 tbsp
Chopped tomatoes 1 medium size
Ginger-Garlic paste 1 1/2 tsp
Red chili pdr 1 tsp
Turmeric pdr 1tsp
Coriander pdr 1 1/2 tsp
Cumin seeds 1tsp
Fresh cream 1tbsp(optional)
Oil 1tbsp

Recipe

1.In a wok/kadai add oil to heat,once heated now add cumin seeds to splutter.


2.Now add chopped tomatoes & cook until they become tender.

3.Add ginger garlic paste,cook for few Min's.than add all other spices, red chili pdr,coriander pdr,turmeric pdr & let it cook for another min,keep stirring to avoid burning the spices.
4.Now add mushrooms & green peas & cook until they are tender,you can also cover with a lid so as to make the process faster.but keep an eye,as you do not want them to overcook or burn.


5.Add kastoori methi,just crush it in between your palms & add.

6.Cook for just 2-3 Min's more,if you want to enrich the gravy you can also add 1tbsp fresh cream,to make the gravy richer.

Yummy Methi matar malai mushroom curry is ready,serve hot,with your favourite bread or rice.

Eggless Butter Cookies

Eggless Butter Cookies


All You Need
Ingredients
All purpose flour 2 cups
Powdered sugar 1 cup
Butter 12 tsp/1 1/2 block
Vanilla extract 1/4 tsp
Baking powder 1/2 tsp
Yogurt 2tbsp
salt a pinch
Coloured sugar as you need

Recipe

1.In a bowl sift all purpose flour,baking powder,& salt together.


2.In another bowl mix together butter & sugar with the help of electric blender,on a medium high speed,till its light & fluffy.


3.Now to this add yogurt,vanilla extract & whisk again.

4.Now gradually add the flour mixture in this,mix everything together with the help of electric mixer on a slow medium speed,till you`ll see everything is well combined..

5.Now take out the dough in a plastic sheet,this will go in the refrigerator for at least 1hr,before you start rolling it.

6.After 1hr take out the dough from the refrigerator,roll the dough & cut the cookies into desired shapes.

 7.Now place them over the powdered sugar,the sugar will stick on the cookies,now place the cookies on the baking tray laid with parchment paper.

8.This will go in the preheated microwave oven at 375*F for 10-12 Min's or until the edges are golden brown.
Egg less Butter cookies are done.Enjoy

Please note that you can get coloured sugar from the market but the same you can easily make at home,just like i made.

To make coloured Granulated sugar you`ll need

Granulated Sugar 1 cup
Food colour of your own choice
aluminium foil

Process
1.In a bowl add sugar to this add 2-3 drops of food colour,mix well.


2.Now in a baking tray lay down aluminium foil,place the sugar on the foil & this will go in the preheated oven at 350*F for just 10 Min's.(if you have time you can also let it air dry,instead of putting it in the oven,but it just makes the process much faster)

3.Once done you can store this sugar in airtight containers for later uses.

Chili Veg Pan Pizza

(In the above pic i have used Mexican blend of cheese & all veggies as toppings)

(In the above pic i have used paneer as my topping & only mozzarella cheese)

For making the pizza we need to make quite few preparations like making the base separately,than making the toppings,making the sauce & than of course combining everything together & making yummy pizza.

For the toppings we`ll need
(You can add any toppings of your choice,here i m sharing what i have added as toppings)




Chopped chunks of  onion 1 medium(make sure you chop big chunks of all the veggies you add)
chopped chunks of bell peppers(i have used combination of green & red bell peppers to add colour) 1 cup
chopped carrots 1/2 cup
chopped spring onion
boiled corns 1/2 cup
so ya sauce 1tsp
ketchup 1 tbsp
vinegar 1/2 tsp
salt as per taste

Process of making the toppings
1.In a large pan add 1 tsp olive oil,to this add chopped onions,saute it for few Min's.

2.Next add all other veggies bell peppers,carrots,spring onions.
3.I have also added few boiled corn kernels.



4.After saute it for 4-5 Min's now add tomato ketchup, so ya sauce,vinegar & salt.cook for about 2-3 Min's,do not overcook them because you need that crunch in your veggies.



5.Toppings are done keep it aside.

*please note that toppings can be modified as per individual taste & availability of items,if you have paneer you can add paneer to the above veggies it tastes even better,if you like mushrooms you can add.

For the sauce 

You can buy market ready sauce,or if you have tomato ketchup & some red chili sauce you can combine these two,to get that perfect sauce for spreading on your pizza base.







Ingredients for pizza base
(it will make approx 6-8 pan pizza,depending on the size you choose)





All purpose flour 1 cup
Whole wheat flour 1 cup
Dry active yeast 1 packet/2tsp
Salt as per taste
Warm water 3/4 cup
Olive Oil1tsp

Recipe for making the base of pizza

1.Dissolve the dry active yeast 2tsp/1 packet in 3/4 cup of lukewarm water(make sure the water is neither cold nor very hot,otherwise the yeast will not rise),mix well,cover it & keep it aside for 10 Min's to let it rise.

2.Now in a big bowl mix all purpose flour,wheat flour & salt,now make a well in the center,in it pour the yeast mixture,let it set aside like this for couple of Min's.


3.Now mix everything together,in case you need more water to knead the dough you may use,but make sure to use only warm water.in the end apply 1tsp olive oil to smooth the dough.

4.Now cover this with a damp cloth & let it rest for at least 1 hr before you start rolling.

5.Now after resting for 1 hr the dough will rise almost double in size.


(at this point pre-heat the oven at 365*F )

6.Now start rolling the dough,into a quarter inch thickness.


7.Now with the help of a pie cutter cut it into desired size pizzas or if you can just cut it with the help of any round shape object like i have used the cap of one my containers,which is of perfect pan pizza size.lay the on the greased oven tray.

8.Now apply a thick layer of tomato sauce,which we have already prepared.

9.Now top it with toppings which we had already made, i have also added some cherry tomatoes cut into halves on top.


10.Now spread some grated cheese on top,i have used store bought Mexican blend of cheese.but combination of  mozzarella & Parmesan works great as pizza toppers.


11.Now this is all set to go in a pre-heated oven at 365*F  for almost 20 Min's or until they are done.


Yummy Pan pizza are ready to be served,serve them hot.Enjoy.
