Sarson Ka Sang & Makke ki Roti

Sarson Ka Saag


Although its originally a dish from northern part of India,but because of its popularity its known all over India & even overseas.its best accompanied with makki ki roti(Indian flat bread) & a dollop of butter on top,which is totally optional,but i m talking about how people in Punjab,or in northern part of India will serve it.So try making it & do leave your comments on how it turned out to be.

All you need

Ingredients





Washed & chopped spinach 1 bunch
Washed & chopped mustard leaves(original recipe calls for leaves,but in my recipe i have used kale,it works great) 1 bunch
Finely chopped red onion 1
Green chilies 1-2
Garam masala pdr 1tsp
lemon juice(1/2 lemon)
Gram flour/Maize flour/Makki ka atta 1tsp
Grated ginger 1tsp
Finely chopped garlic 1tsp
Red whole chillies 1-2
Methi seeds 1/ tsp
Ghee/clarified butter 2tsp
Salt to taste

Recipe

1.First boil all the greens 1bunch of spinach & 1 bunch of kale,till they are cooked well,than blanch them in the cold water,so that they maintain their colour.





2.In a blender blend all the greens with 1-2 green chillies,to a fine paste.


3.Now heat a pan,add 2 tsp of ghee/clarified butter,add methi/fenugreek seeds,red whole chillies,let seeds crackle than add chopped onions,ginger,garlic,cook for a while.add garam masala pdr.switch off the heat.
4.Now In another pan cook the blended greens puree well.
5.To this add the above onions & spice mix.add lemon juice, & 1 tsp makki ka atta,mix everything well.



Yummy Sarson Ka Saag is ready,serve it with a dollop of butter on top.Enjoy it with makki ki roti & a small piece of gud/jaggery.



Makki ki Roti

Nothing beats this combo of sarson ka saag & makki ki roti,once you have cooked saag,now its time to make makki ki roti.
now for those of you who never heard of makki ki roti,makki is another name for maize & roti means Indian flat bread,so makki ki roti means flat bread made of maize flour.you can easily find maize flour/makki ka atta in any Indian grocery store.
so to begin with,lets see what all ingredients we`ll be needing for this

Ingredients for makki ki roti



Makki ka atta/maize flour 2 cups
Salt to taste
Ajwain seeds 1tsp
Garam masala pdr 1tsp
warm water to knead the dough

Recipe

1.Mix all the dry ingredients together.
2.Now knead the dough by adding very few water at a time,make sure to use warm water,as it makes the process much easier.maize flour is not easy to handle,like wheat flour,but takes a little practice,keep kneading it till you can get binding consistency.


3.Now make small balls,place these on any plastic sheet/Ziplock bags comes very handy ,just cut open them on from one side,grease the sheet,its imp to grease so as to prevent the dough from sticking,now place it on one side & cover the ball with other side of plastic sheet.


4.Now with the help of palm apply slight pressure on the ball to make it flat,keep doing it very gently & try to make it flat as much as possible,no problem if it breaks,you can again roll it back into a ball & again keep repeating the same process,unless & untill you`re satisfied with the final end result.
5.Once done slowly remove it from the plastic sheet,& place it on the hot griddle/tawa/flat pan.
6.Drizzle some ghee/clarified butter & cook it for few mins around  2-3 on one side,than slowly turn it on the other side,you`ll know its cooked once you`ll see deeper shades of yellow & browns.



Makki ki roti/maize flour flatbreads are ready,serve them hot topped with some butter on top.

Few tips/advices while making makki ki roti

1.If in case you see that your roti/flat bread is breaking from the sides you can drizzle some water in that area & bind it together.
2.In case you are comfortable with making the roti in your hands,you can just wet your hands,take some dough in one palm now with the help of other hand just apply some gentle pressure & make roti`s.
3.If none of this works & this is your first time in making makki ki roti than the best thing you can do is to add equal amounts of whole wheat flour & maize flour(1 cup whole wheat flour + 1 cup makki ka atta),in that way you`ll get a perfect atta/dough & you`ll be able to roll them like normal chapaties/flat breads.
