Blueberry muffins

Blueberry & chocolate chip muffins


Ingredients



All purpose flour 2 cups
sugar 1 cup
butter 1/2 cup
eggs 2
baking powder 2 tsp
milk 1/2 cup
salt 1/2 tsp
vanilla extract 1 tsp
Blueberries 1/2 cup
Chocolate chips 1/2 cup

Recipe

1.In a bowl mix together everything butter,sugar,eggs & salt until smooth.




2.Sift in flour & baking powder & whisk everything together.


3.Whisk in 1/2 cup milk at a time,& mix.

4.Add in vanilla essence,& divide it into two portions.

5.In one bowl i m adding blueberries & in another bowl i`ll be adding chocolate chips.(see the pics)






6.Mix together,lay the muffin baking tray with cupcake liners & pour the batter.


7.This tray will go in the oven at 375 * F for 30 Min's.



Delicious muffins are ready.


Homemade Doughnuts

Homemade doughnuts recipe

Ingredients

All purpose flour 3 cups
warm milk 4tsp
warm water 4tsp
sugar
Butter
Egg 1
Dry yeast 1 1/2 tsp
vanilla essence 1/2tsp
Salt 1/2 tsp

Recipe

1.In a large bowl put the warm water,sugar & dry yeast mix & let it aside for atleast 10 mins to rise.


2.After 10 mins add 1/2tsp salt than sift half the flour,& mix


3.Add 1 egg & mix.




4.Now add vanilla extract,& add butter.


5.Now sift rest of the flour & mix it well,with the help of warm milk knead,it will result in the consistency of a sticky dough,you can add little flour if u need.







6.Now set aside this dough for atleast an hr,you`ll see it rise almost double in size,than you know its ready.


7.Now roll it with the help of rolling pin on the flat surface,it should have 5mm thickness.


8.Now with the help of cookie cutter,cut it into doughnuts,these doughnuts have to be setaside,untill they rise.





9.Now heat the oil,it should be on medium high,now fry them for 2mins each on both the sides.


10.Drain them on the paper towel,doughnuts are ready.

Glazing the doughnuts



First method

Mix some icing sugar with cinnamon & drizzle this with the help of sift on the doughnuts.

second method(glazing)

Mix 1/2 sugar with 4tsp of butter & 4tsp of warm milk mix well.dip top side of hot doughnuts in this,to get that glaze.

third method(chocolate glaze)

Mix 1/2 cup sugar,4tsp of butter,4tsp of warm milk,1tsp of cocoa powder
top side of doughnuts in this ,to get that chocolate glaze.

Fourth method(jelly filled doughnuts)

u will need 2 pieces of doughnuts,on one place a spoon full of jelly,& cover it with another piece,apply some water with the help of your fingers to seal the doughnuts.fry it in the usual way & serve with powdered sugar.

Chicken tikka /chicken tikka masala

chicken tikka/chicken tikka masala


Chicken tikka is an authentic dish from northern part of India especially the state of Punjab, & now served worldwide.it is mainly small pieces of chicken marinated in yogurt & spices,broiled over high heat in clay based ovens known as tandoors in India.
Today i am here trying to recreate that authentic taste of chicken tikkas at the comfort zone of my own kitchen oven.

For chicken tikkas all we need

Ingredients



Boneless/skinless pieces of chicken breasts(around 3-4,cut into bite size pieces)
Yogurt 1 cup
Lemon juice 1tsp
cumin pdr 1tsp
ginger-garlic paste 1tbsp
paprika 2tsp
garam masala 2tsp
chopped thick pieces of bell peppers(yellow,red,green)
chopped onions
chopped tomatoes
Garam masala powder 1tsp
Salt & pepper powder to taste

Recipe for chicken tikkas

1.In a bowl add all the spices(coriander pdr,cumin pdr,paprika,salt & pepper pdr,ginger-garlic paste,garam masala pdr) than add yogurt,mix everything together well.



2.Add pieces of chicken,bell peppers,onions & tomatoes in the yogurt.
3.Mix everything well,keep this refrigerated for at least 2 hrs.


4.Soak the bamboo skewers in water for at least 20 Min's.
5.After 2hrs take out the marination & start arranging them in the skewers.

6.once all done arrange them in the baking tray,now broil them at the highest temperature you have in your oven,mine went for 525*F for 30 Min's,(first 20 Min's took them out turned them than again for 15 Min's on the other side)



Delicious chicken tikkas are ready,just squeeze some lemon on top & serve them with home made coriander-mint chutney.



Chicken tikka masala

For the gravy/curry

Ingredients



Finely chopped onions 1medium sized
ginger-garlic paste 2tsp
whole garam masala
Kastoori methi 1tsp
Broken cashews 1tsp
Tomato puree 1/2 can
coriander powder 2tsp
turmeric powder 1tsp
paprika 11/2 tsp
salt to taste
oil 2tbsp

Recipe

1.Heat some oil in the pan.
2.Add whole garam masala.
3.Add chopped onions,ginger-garlic paste,& saute for 2-3 Min's.


4.In a blender blend tomato puree & broken cashews,add kasturi methi.
5.Add the spices coriander pdr,turmeric pdr,paprika,kastoori methi & saute.
6.Now add the blended tomato puree,& Lil water & cook this over medium-low flame for about 10-15mins.


7.Now time to add chicken tikkas,cook for another 5 Min's.
8.Garnish it with chopped coriander.



Delicious chicken tikka masala/gravy is all ready,serve it with Nan,chapati or rice.

Kale chips

Kale chips Easy-Breezy!!

Kale is getting popularity these days,its a form of wild cabbage.its considered rich in calcium & has the capability in building DNA cells & blocking the growth of cancer cells .
Tender green kale is an excellent addition to any salad.it can be roasted,stir fried,steamed,baked or even frosted.
when baked kale chips takes the consistency similar to potato chips,& is a much healthier alternative to potato chips.

here's all what you're gonna need

Ingredients


One bunch of fresh kale
olive oil 1tsp
pepper to taste
salt to taste
baking tray
parchment paper liner 

Recipe

1.Wash & remove the thick stems of the kale leaves.


2.Pat dry them over the kitchen paper towel.

3.once dried completely lay them flat on the baking tray lined with parchment paper.
4.Drizzle some olive oil on top,sprinkle some salt & pepper.
5.This tray will go in the oven at 350 F for 20 Min's.

Crunchy-munchy kale chips are all done,take them out & serve.its as easy & breezy!!
