Panchamitra & Panjiri (Prasad Recipe )

Panchamitra is also called charnamitra in india,it comprises of a combination of five main ingredients,that is the reason it is called panchamitra(panch means five ingredients in Sanskrit)
Panjiri is a sweet snack main accompaniment with panchamrit,its a whole wheat flour fried in ghee.

Ingredients for panchamrit

Yogurt/dahi 1cup
Milk 1/3rd cup
Sugar 2-3 tsp
Honey 2 tsp
dry fruits 1/2 cup
(sometimes due to religious beliefs people also add gangajal & tulsi leaves)

Recipe of panchamitra

just mix all the ingredients together,in a big bowl add yogurt,to this add sugar & mix well,than add milk,honey & dry fruits & mix well its ready.
you can prepare this in advance & chill it in the fridge & serve it later.




Ingredients for panjiri

Wholewheat flour 2 cups
Ghee 2-3 tsp
Sugar 4-5 tsp
Dry fruits as desired

Recipe for panjiri

1.Heat 2-3 tsp ghee in a pan,add wholewheat flour to this,roast the flour on a medium-low heat,while continuously stirring it,so to avoid it being burnt.


2.Once you`ll see that its giving out a nice aroma & flour is turning light brown in colour that time you`ll know its done,now time to add sugar & dry fruits.


3.Mix everything well.turnoff the heat & its ready to be served with panchamitra.

Dates & walnut roll/Barfi in Microwave,ready in just 4 mins


Dates & Walnut Barfi/Roll

Dates & walnuts barfi is very easy to make & tastes excellent.Dates provide essential nutrients & a very good source of potassium,& so do walnuts,who are dense in nutrients.
Today i am sharing a very quick & easy,mess free recipe which anyone can make in microwave in just 4 Min's!!


Ingredients

Pitted Dates 1 cup
Walnuts 1/2 cup
Ghee 4-5 tsp
Coconut pdr 1-2 tsp
Poppy seeds 1-2 TSP
Cardamon pdr 1 tsp



Recipe

1.In a large microwave safe bowl add all the dates,walnuts & 4tsp ghee,mix well & this will go in the microwave on high heat for just 2 Min's.

2.After 2 Min's remove the bowl give It quick mix add poppy seeds & cardamon pdr, mix well & this will again go in the microwave for 2 more Min's.


3.Its done now remove the mixture on to a foil, roll it flat with the help of a rolling pin.

4.Now if you like to make barfi's than you can directly keep this in the fridge & let it cool down for 10-15 Min's & cut it into desired barfi shape,or can roll it over into rolls.

5.After rolling it into a cylinder shape if desired you can sprinkle some coconut pdr(optional),wrap up the foil & keep it in the freezer for 10-15 Min's till it's hardened a bit.
6.After 15 Min's remove it from the freezer & carefully unwrap it & cut it into desired size rolls.





7.Dates & walnut rolls are ready to be served.

pls note :you can use any dry fruit available even almonds,cashews or pistachios.
if dates not soft enough you can first chop them a bit or even roughly grind them for making the process faster.

Vada Pav/Wada Pav

Vada Pav/Wada Pav

Vada pav is also known as Indian burger,is a  popular spicy street food from the state of Maharashtra,it consist of batata vada sandwiched between two slices of pav/bread.


Ingredients


For potato dumplings:

Boiled & mashed potatoes 3-4 medium size
Ginger-Garlic paste 1tsp
Mustard seeds 1tsp
Cumin seeds 1tsp
Curry leaves 5-6
Red chili pdr 1/2 tsp
Turmeric 1/2 tsp
Dry mango pdr/Amchoor pdr 1 tsp
Garam masala pdr 1tsp
Chopped coriander
salt as per taste

For gramflour/besan batter

Gramflour 1 cup
hing a pinch
Turmeric pdr 1/2 tsp
Red chili pdr 1/2 tsp
Garam masala 1tsp
salt as per taste

Recipe

1.Boil & mash the potatoes.
2.In  a pan heat 1tsp oil & add mustard seeds,cumin seeds,curry leaves for tempering,now add ginger-garlic paste & saute for 1-2 mins.


3.To this add turmeric pdr,red chili pdr,amchoor pdr,garam masala & chopped coriander.
4.Now add mashed potatoes to this & mix everything well & turn off the heat.let this cool a bit.


5.once its cooled off a bit than make small golf size dumplings out of this.

6.Now lets prepare the batter of gram flour/besan.

7.For that add a pinch of hing,1/2 tsp turmeric pdr,1/2 tsp red chili pdr,1tsp garam masala pdr & salt as per taste,now add very little water at a time to make a smooth lump free batter.

8.Now heat some oil in the kadai for deep frying .
9.Now dip the balls of potatoes in the batter & deep fry them in hot oil.

10.once they are done take them out on a paper towel to drain off all the excess oil.

To serve slice the pav in half,apply some green chutney on one half,put the fried vada in the center & cover it with the other half of vada,serve with Tempered Green chillies or Spicy garlic chutney.


Tempered Green Chillies/Fodni Mirchi

Tempered Green Chillies/Fodni Mirchi



 Tempered Green Chillies are originally from Maharashtra's cuisine & are excellent accompaniment to any Indian fried dishes like vada pav,samosas,khamand dhoklas etc.

Ingredients





Green chillies 6-8,
Black salt a pinch
Yellow mustard 1/2 tsp
Asafoetida a pinch
Mustard seeds 1/2 tsp
Turmeric pdr 1/2 tsp
Lemon juice 1 tsp
Oil 1tsbp
Salt to taste

Recipe


1.Heat the oil in a pan.Add a pinch of hing,to this add mustard seeds once they start to crackle add turmeric pdr.
2.Add salt & black salt.
3.Add yellow mustard seeds,now add green chillies cover the pan with a lid & let the chillies cook until the skin get tender.


4.Add some lemon juice,serve immediately.


Maharashtrian style Chutney/spicy garlic chutney

Spicy Garlic Chutney





Garlic chutney is very common name in maharashtrian food especially,whosoever has tried vada pav ever in their life would know what i am talking about,here i am sharing my mom`s recipe which she learned from one of her maharashtrian friend when she was about my age,that was the first time in the year 1991,when we tasted this blend of spices,from that time this chutney has found a special place in my family,one of dad`s favourite.

Ingredients




Roasted peanuts 1/4 cup
Roasted Sesame seeds 1/4 cup
Minced green chillies 3 chillies
Minced Garlic 3-4 garlic cloves
Coconut pdr 1/2 cup
Cumin pdr 1-2 tsp
Red chili pdr 1-2 tsp
Asafoetida  just a pinch
Cooking oil 1tbsp
Salt as per taste
(pls note : The amount of spices you can alter according to your own taste)

Recipe

1.Add roasted peanuts & sesame seeds into a blender & make a fine pdr.


2.In a pan add 1 tbsp oil to this add pinch of hing/asafoetida,minced green chillies & garlic & saute well.to this add coconut pdr & roast till it turns slightly brown.turn off the heat.




3.To this add cumin pdr & red chili pdr.mix well & allow it to cool.
4.Now add powdered peanuts & sesame pdr.
5.At last add salt & mix everything well,teeka/spicy chutney is ready to be served.

Spicy Masala Peanuts/Peanut bhajias

Spicy Masala Peanuts



Ingredients



Peanuts 1cup
Gram flour/besan 1/2cup
Rice flour 1-2 tbsp
Chunky Chaat masala pdr 1-2 tsp
Garam masala pdr 1tsp
Red chili pdr 1tsp
Turmeric 1/2 tsp
Salt to taste
Oil for deep frying

Recipe

1.In a bowl add gram flour/besan & Rice flour to this add all the spices chaat masala pdr,garam masala pdr,chili pdr,salt,turmeric,make a fine/smooth paste by adding very little water at a time,just like you do in case of pakori`s.


2.Heat the oil in a wok/kadai.
3.Now add peanuts in this paste,make sure that the peanuts are coated completely in this mixture.


4.Now deep fry these peanuts individually,in well heated oil,till they turn golden brown in colour.


5.Take them out in a paper towel to drain any excess oil,you can eat them right away,or they can be stored in any airtight containers for 1-2 months or even more.




Peanuts being a legume is highly rich in nutrients.Try making these zesty & spicy peanuts in home,perfect combination with evening tea time.

Mango Lassi

Lassi is a popular,traditional yogurt based drink,mainly originated from punjab region,India.Its a blend of yogurt,water,spices & sometimes fruits.it can be both sweet & salty.today i m sharing here mango lassi which has always been a favorite in my family all summer long.

Ingredients


Chopped mangoes 1 cup
Yogurt                    1 cup
Cardamom pdr      1 pinch
Mint leaves             3-4(for decorating)
Milk                         1/4 cup
Ice cubes                  1/2 cup
Sugar                        4tsp(as per taste)
Rose syrup                1-2tsp(optional)

Method

1.Add all the ingredients in a blender chopped mangoes,yogurt,milk,sugar,cardamom pdr,ice cubes.give it a quick blend.
2.Delicious mango lassi is ready to served.serve in individual glasses,add rose syrup on top & decorate with mint leaves .

Enjoy chilled mango lassi.you can also prepare in advance & can refrigerate it for upto 24hrs.
