Ghee/oil for frying

.In a large mixing bowl add 2 cups of all purpose flour & ghee knead this into a hard dough with the help of little warm water.keep it dough aside to rest for at least 20 Min's to set.

.Now after 20 Min's start rolling he dough onto a flat surface with the help of rolling pin into a 1/4 " thickness, now cut it into thin strips & than cut it either diagonally to make diamond shape or you can just make it into small squares.

.Now heat oil in the pan for deep frying, make sure the oil is not too hot, flame should be medium low, this might take 7-8 Min's to fry single batch of shakarpara.

.Now take them out onto a plate.
.Now lets make sugar syrup. In a pan boil 1 cup sugar with 1/2 cup water to make a 2 thread syrup, this might take 7-8 Min's.

.Once you reach 2 thread consistency than add 1/4 tsp cardamom pdr & few drops of rose extract(optional)
.Now switch off the flame, sugar syrup is ready, now dip these fried shakarpara in this syrup, make sure you remove them quickly, don't let them sit in the sugar syrup for too long as this can make them soggy.

.Now remove them in separate plates & let the sugar syrup dry off completely & let them cool off completely than you can store them in any air tight containers,& can keep them for 2 months.
